When you require using just the pulp of orange in small pieces or the juice is being used alone you can make orange baskets. To make orange basket cut the peel carefully in the form of a basket with a handle half an inch wide. Remove the pulp from the orange with the help of a spoon. These baskets can be kept fresh for few days if you put them immediately in cold water. You can use orange fruit baskets for serving orange sponge, lemon jelly or a fruit blanc mange. If you are visiting anyone sick you can serve orange sponge in the basket and it will look very attractive. To make orange sponge take the juice of a medium sized orange. Strain the juice and dissolve two teaspoons of sugar in it by stirring. Soak one teaspoon of granulated gelatin into two teaspoons of cold water. When softened dissolve over hot water. Add the gelatin to orange juice with few drops of lemon juice. Set this mixture over an ice bowl until its edges begin to harden around the bowl. You can use orange peel to prepare candied orange peel honey, orange candied fruit or recipe candied orange rind. Soak for twenty four hours peel of three or four oranges cut into thin strips. Use cold water for soaking and add two tablespoons of salt to each quart of water. To make candied orange peel you need to discard the salt water and clean thoroughly.  Put in fresh cold water and boil until almost soft.  Prepare sugar syrup by adding two cups of sugar and one and one quarter cups of water. When the sugar mixture boils add the orange peel. Let it simmer until the syrup looks clear and thickened. Use a fork to take out few pieces at a time and roll in granulated sugar. Spread the sugar coated pieces on a flat platter or dry them in the oven with door open.
