Chinese Chicken
Ingredients:
1/2tsp salt
1 tabs dry sherry
(1-inch) piece green ginger, grated (1-inch)
1 clove garlic, crushed
3 lbs chicken
4 tabs tomato sauce
1/3 tsp chili powder
1 tabs white vinegar
Directions:
Wash and dry chicken.
Combine all the ingredients as one and mix well.
Add the chicken, coat well with the marinade. Let it stand quite a few hours or for the whole night in refrigerator.
Place chicken in a baking dish and pour over marinade. Enfold dish with foil.
Bake in a medium heated oven for almost 1 1/2 hours, take away foil, and bake for more thirty minutes, brushing constantly with marinade.
