2 1/2 cups confectioners’ sugar
2 egg yolks
2 1/2 cups almonds, finely ground
1 small lemon, zested and juiced
1/2 cup confectioners’ sugar, for dusting
Preheat the oven to 325 degrees F (165 degrees C), and it’s better if you line up your baking trays with parchment paper.
Add the confectioners’ sugar, egg yolks, and eggs in one bowl with an electric beater, and beat well on Medium-Low until well mixed. Mix in the ground almonds, lemon zest, and an adequate amount of lemon juice to create a chunky smooth batter.
Put the mixture into a cookie press with a 1/4 inch star-shaped tip, and squeeze out a 6 inch lines of mixture. Cut the mixture into 2-inch sticks, or make into rings or letters, and put them on the already set baking trays.
Bake in the preheated oven awaiting the cookies are crunchy and light brown, 6 to 8 minutes. Let the cookies to cool.
Put 1/2 cup confectioners’ sugar in a fine net sieve, and slightly powder the cookies before you serve them.
