Pecan Apple Strudel Cake

Pecan Apple Strudel Cake Recipe is a light dessert, yes lighter than a mousse cake, and it's my personal favorite too.It tastes much like a peacan pie but it's not oversweet and the best thing about this Pecan Apple Strudel Cake Recipe is that it's gluten free.


1 cup pecans, finely chopped or blanched slivered almond, crushed
2 tablespoons brown rice flour
4 tablespoons brown sugar
1 tablespoon canola oil
1 teaspoon cinnamon
Cake Batter
1/3 cup chopped pecans or blanched slivered almond, crushed
1/2 cup rice flour (white)
1/2 cup brown rice flour
1/3 cup tapioca starch
3/4 teaspoon xanthan gum
1 teaspoon baking soda
1 1/2 teaspoons gluten free baking powder
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup canola oil
3/4 cup dark brown sugar
2 egg replacer eggs
4 tablespoons orange juice
1 1/2 cups chopped apples (about 2 apples)


Preheat oven to 325°F.
Already set a little deep pan by greasing and powdering with white rice flour.
Combine all strudel ingredients in a little bowl and put aside.
In an average bowl, sieve jointly all the dry ingredients. (except for strudel and apples).
Include the wet ingredients and combine with a wooden spoon.
Include the chopped apples and stir to mix well.
Scoop half the mixture into the already set pan then layer half the strudel batter on top of the mixture.
Include left over mixture and then left over topping.
Put in the oven and bake just about 1 hour, or until a toothpick slotted in the middle comes out clean.
Cool for minimum 10 minutes before you serve.
