2 tablespoons olive oil
2 medium onions, minced
2 large red bell peppers, minced
2/3 cup extra crunchy peanut butter
4 cloves garlic, chopped
1 (28 ounce) can grated tomatoes, with liquid
1/4 teaspoon chili powder (optional)
8 cups vegetable broth or stock
1/4 teaspoon pepper
1/2 cup uncooked brown rice
Heat oil in a big stock pan on medium high flame. Cook onions with bell peppers until slightly browned and soft, mixing in garlic when roughly done to stop burning. Mix in tomatoes, veggies stock, pepper, and chili powder. Trim down heat to low and bring to boil, uncovered, for half hour.
Mix in rice, cover, and boil for additional 16 minutes or until rice is soft. Mix in peanut butter until well mixed and stir, and serve.
