Apple Raisin Bread Pudding


This layered apple raisin bread pudding is a bit crispy on top, and this apple pudding is dense and dotted with tangy fruit on bottom. This apple raisin bread pudding makes for a tasty breakfast or healthy dessert.


Raisins 1/2cup
2 cups skim or low-fat milk
Large eggs 4
2 tabs butter
3 cups day-old bread cubes (about 3 slices)
Firmly packed brown sugar 1/3cup
3 cups day-old bread cubes (about 3 slices)
3/4 tsp pumpkin pie spice
1 tsp vanilla extract
Apple wedges, optional
Whipped cream, whipped topping or ice cream, optional


Put butter in a pan, over medium heat to melt. Mix in chopped apples. Cover and cook over medium heat, mixing occasionally, until slightly soft, about 5 to 7 minutes.
In shallow 1 1/2 quart casserole, lightly toss together apples, bread cubes and raisins.  Beat together eggs, milk, sugar, vanilla and spice in a medium pot until sugar is dissolved. Pour over apple mixture. Cover and refrigerate several hours or overnight.
Bake in preheated 350°F ovenabout45 to 55 minutes, until knife inserted near center comes out clean. Serve hot, warm, or chilled garnished with whipped cream and/or apple wedges, if desired.
