Description

In this Asian chicken salad recipe, crunchy veggies and soft chicken breasts are tossed in a tangy vinaigrette that create a refreshing main-dish called Asian chicken salad. If you poach the chicken on your own, keep aside 3/4 cup of the cooking liquid to make the dressing later for Asian chicken salad recipe.

Ingredients

1 tsp ground ginger
Vegetable oil 1/4cup
Bean sprouts11/4cups
Diced cooked skinless boneless chicken breasts 4
Snow peas 11/2cups
5 tsp soy sauce 
Diced celery 1/4cup
1/8 tsp freshly ground black pepper
1/8 tsp salt
1 (8-ounce) can sliced water chestnuts, drained
1/8 tsp sugar

Recipe

Mix the chicken, bean sprouts, snow peas, and scallions. Then make a dressing using the oil, soy sauce, ginger, salt, pepper, and sugar. Put in to the chicken mixture. Include the celery and water chestnuts and mix well. Serve chilled.
