Homemade blueberry syrup recipe by Recipes Expert, best for pancakes toppings and good for canning purposes also.
1/2 c. sugar
1/4 c. water
1/4 c. light corn syrup
1 tbsp. cornstarch
2 tsp. lemon juice
2 c. blueberries
Combine sugar and cornstarch in 1 quart casserole. Add water, syrup, and lemon juice. Stir in blueberries.
Microwave on full power 4 1/2 to 5 minutes or until thickened.
Microwave-tip: For a thicker sauce, add additional teaspoon of cornstarch.
