Broccoli Rabe and Salami Pasta

2 lots of broccoli rabe, trimmed and thickly chopped
4 cloves garlic, grated or finely chopped
1/2 teaspoon mashed red pepper flakes
1/4 cup extra-virgin olive oil, eyeball it
1 pound rigatoni with lines, steamed to al dente
1/2 cup grated Parmigiano-Reggiano, plus some to pass at table
1/3 pound salami, cut and chopped (Genoa, sopressata, hot or sweet, or a mix)
1 1/2 cups ricotta cheese
First you have to boil water 2 inches in a deep skillet for broccoli rabe and 1 big pan of water to a boil for pasta. Salt the water generously.
Cook the broccoli rabe in water 8 -10 minutes, then sap the excessive water. Put back the skillet to normal flame with 1/4 cup extra-virgin olive oil. Put in garlic and red pepper to the oil and lightly stir for a few minutes, put broccoli rabe and cook 7 minutes more.
At the same time as the broccoli rabe cooks, put the rigatoni into the simmering water and steam until al dente. Just before draining preserve 1 cup stuffy liquid.
Mix the ricotta, Parmesan, salami with black pepper, as you like, in a pasta bowl. Include the stiff liquid and mix well. Put in the broccoli rabe with pasta and toss for 3 to 4 minutes to coat and mix.
