A great starter for a party because these pinwheels are so goodlooking, pack them for your kids’ lunchbox and get them a delicious treat
1 (8-ounce) boneless, skinless chicken breast
1/4 teaspoon salt
1 teaspoon soy sauce
1/2 teaspoon freshly grated orange peel
1/8 teaspoon ground black pepper
1 teaspoon olive oil
4 teaspoons almond butter
1 small head butter lettuce
8 slices soft sandwich bread, crust removed if desired
1/4 cup plum sauce
Heat oil in a wok and shimmer then add chicken with season it with salt and pepper. Remove it from heat when thoroughly cooked and make thin slices when cooled down.
How to prepare one pinwheel sandwich:
Put one slice of bread on the plastic wrap, and flatten it with a hammer or something like that. Now spread almond butter in middle of the slice [horizontally]. Now put a lettuce leaf or two depending on the size of our bread slice, then spread chicken on one side of the slice and leave the other end ‘with no chicken’, at least on 1/2 inch space. This is just to make the rolling easier. Now wrap each slice in a cylindrical shape starting from the plastic wrap on 1/2 inch empty side of the slice. Now keep them in freezer for half hour or refrigerate them for at least one hour.
How to make pinwheel sandwiches dip:
Add soya sauce and orange peel to plum sauce and serve your sandwiches with this dip.
