2 tablespoons extra virgin olive oil
1/4 cup chopped fresh cilantro
4 cups seeded, chopped plum tomatoes
1 1/2 cups finely sliced white onions
2 tablespoons grated garlic
2/3 cup sliced stuffed green olives
2 tablespoons butter
1/4 cup sapped capers
1/8 teaspoon red pepper flakes
4 (6 ounce) fillets sea bass
1 1/2 cups dry white wine
Heat oil in a big skillet on medium flame. Sauté onions until it’s soft. Add garlic, stir, and sauté for almost 1 minute. Include tomatoes, and cook until they start to become softer. Stir in capers, wine, olives, with red pepper flakes. Put on flame to a simmer.
Put in sea bass into sauce. Cover, and lightly simmer for 9 to 13 minutes or until fish flakes simply with a fork. Shift fish to a serving dish, and keep hot.
Increase the flame, and include butter to sauce. Cook until the sauce condenses. Mix in cilantro and stir well. Serve sauce over fish.
