Vanilla Ice Cream
Description
Super recipe for vanilla ice cream that stays creamier even when frozen for days.
Ingredients
8 egg yolks
2 cups sugar
1/4 teaspoon salt
4 cups milk or evaporated milk
4 cups cream
2 teaspoons vanilla
Recipe
Mix slightly beaten egg yolks with the sugar and the salt. Scald the milk and the cream together. Add a little of the milk mixture to the eggs.
Return to the milk mixture and whip in, continuing to cook on low heat. Cook and stir until the mixture coats the spoon.
Remove from the heat. Add the vanilla. Refrigerate overnight.
Freeze by conventional method or in an ice cream machine.

one of the best vanilla i have ever eaten, actually i ate it first time at my bro's home, later i taken the recipe from and tried it myself. and i have added some coco syrup while serving since my family is a coco addict and the taste was even better...

I'm a chef by pro but i was amazed when i had tried this recipe for the first time, coz it was wonderfully easy, light and creamy without being too rich.

this recipe is great! I've made this ice cream two times in 3 days and by adding different variations to the recipe since i have to make it for a large family gathering. when i made it for the first it had somewhat grainy texture but still the taste was great. but of course we cant call it perfect. so next time, i added water in sugar and let it dissolve well before going any further and the grainy texture was gone and this time everything was perfect.

I would say the best ice cream recipe you can easily make at home. I had little bit modified it by using 1% milk instead 4 cups heavy cream just to kill a few calories and my entire family said it was one of the very best summer desserts I ever made for them. So you too must try this recipe.
