In this recipe for yogurt tomato salad; yogurt, cucumber and cheese. Unlikely companions you’d think, but they create a fantastic and remarkable dressing. Thisyogurt tomato salad recipe is just perfect for spooning on asparagus, and sliced green onions.
Medium tomatoes, cored, cut into 1/2 inch cubes and drained 2
Peeled medium cucumber 1
1 tabs finely chopped onion
1 tsp salt
Chopped fresh parsley 1/3cup
2 tsp cumin
Low-fat plain yogurt 1 cup
3 tabs chopped fresh cilantro
Cut cucumbers into half lengthwise, and remove seeds, then slice thinly.
Put cucumbers into a medium pot, dust with salt.
Let stand for 1 hour.
Then drain, squeezing cucumber slightly to remove excessive moisture.
Include tomatoes, and onion.
Combine yogurt, parsley, cilantro, and cumin in a separate bowl.
Pour over vegetables and gently mix.
Cover and chill until serving time.
