Grilled Chicken with Hot Peanut Sauce

Ingredients

PEANUT SAUCE:
1/4 C Sugar free crunchy peanut butter
1/4 C Reduced sodium soy sauce
1/4 C Lime juice (fresh)
1/4 C Rice vinegar
3 T Fresh cilantro, chopped
1 T Brown sugar twin
1/4 t Dried chili flakes
CHICEKN:
8 Boneless skinless chicken breasts
1 Cup Reduced sodium soy sauce
Salt/pepper to taste
1/2 C Cilantro, chopped
Directions

CHICKEN:
Season chicken with salt and pepper. Place in a large freezer storage bag. Add soy sauce and cilantro, seal bag. Refrigerate to marinate at least 8 hours.
Remove chicken from bag and grill until juices run clear and chicken is no longer pink. Slice chicken breasts diagonally across the grain.
PEANUT SAUCE:
Over low heat, warm a quarter cup of crunchy peanut butter.
Stir in a quarter cup each of soy sauce, lime juice, and rice vinegar.
Add three tablespoons or freshly chopped coriander.
Stir in a tablespoon of brown sugar twin.
Add dried chili flakes to taste (usually about a quarter teaspoon).
Stir until ingredients are completely mixed.
Serve sauce warm over sliced chicken.
